Ingredients 

  • 1 32-ounce carton organic chicken or vegetable broth
  • 1 20-ounce package three cheese tortellini , (or your favorite variety)
  • 3 tablespoons fresh lemon juice, extra slices for serving
  • ½ teaspoon dried thyme leaves
  • 3 leaves fresh sage, finely minced
  • 2 cloves fresh garlic, cut in quarters
  • 2 cups fresh leaf spinach
  • ½ cup parmigiano cheese, shredded, for serving
  • 4 slices lemon, garnish

Instructions 

  • Place broth, spinach, lemon juice, thyme, sage, and garlic in a medium soup pot, bring to a boil
  • Cook tortellini according to package directions 
  • Serve in individual bowls. Top with fresh grated parmigiano and extra lemon slices. Serve immediately.

    Simple easy recipe. Needed to add some better than boullion chicken paste for a little more flavor. But really easy. Will do again.

  2. A bit unclear whether the tortellini can cook in the broth or shoukd be boiled separately and added later.
