Crispy Oven Roasted Potatoes Recipe (Easy and Best!)- Wow! These oven-roasted potatoes are so simple and tasty- a staple in our home! They are easy to make, and the whole family loves them. They are the perfect side dish for so many main dishes.
2poundssmall yellow or red potatoes potatoeshalved or quartered
2tablespoonsolive oil
2garlic clovesminced (or 1 teaspoon of garlic powder)
3tablespoonsfresh herbsfinely chopped (any combination you have on hand: rosemary, parsley, thyme, basil, oregano, or marjoram)
Coarse sea salt and black pepper to taste
Optional: 1/4 teaspoon dried paprika or red chili flakes
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl (or straight on the baking sheet*), toss the halved or quartered potatoes with olive oil until they are evenly coated.
Add minced garlic and chopped fresh herbs of your choice to the potatoes. Toss again to distribute the flavors.
Season the potatoes with coarse salt and pepper according to your taste preferences. Mix well.
Spread the seasoned potatoes on a baking sheet or in a large baking dish, in a single layer for even roasting.
Roast the potatoes in the oven for 20-30 minutes or until they turn golden brown and crispy. Keep an eye on them and stir halfway through to ensure even cooking.
Once the potatoes are golden and crispy, remove them from the oven.
