- Small Potatoes: Choose small red or yellow-skinned potatoes. They can be halved or quartered for bite-sized pieces. The kind of potato used affects the texture of the roasted dish. You can also use baby potatoes.
- Olive Oil: Used to coat the potatoes, olive oil adds richness and helps achieve a crispy exterior during roasting.

Crispy Roasted Potatoes FAQs
Roasting potatoes at different temperatures can yield varying results in terms of texture and flavor. Here’s a general temperature chart for roasting potatoes, along with estimated cooking times:
High Temperature (425°F / 220°C):
Cooking Time: 20-30 minutes
Result: Potatoes become golden brown and crispy on the outside while remaining tender inside.
Medium Temperature (400°F / 200°C):
Cooking Time: 30-40 minutes
Result: A balance between a crispy exterior and a softer interior.
Low Temperature (350°F / 175°C):
Cooking Time: 50-60 minutes
Result: Potatoes are softer with less crispiness but may have a richer flavor.
Russet Potatoes: These potatoes have a high starch content and a dry, fluffy texture when cooked. They are great for achieving a crispy exterior while maintaining a soft interior.
Yukon Gold Potatoes: These potatoes have a slightly waxy texture and a buttery flavor. They work well for roasting because they become creamy on the inside while developing a nice golden-brown crust.
Red Potatoes: Red potatoes have a waxy texture, making them ideal for roasting. They hold their shape well and can become crispy on the outside while remaining tender inside.
Fingerling Potatoes: Fingerlings are small and slender potatoes with a firm texture. They roast well, developing a crispy skin and a creamy interior.
No, boiling potatoes before roasting is not necessary. The high roasting temperature (425°F) in this recipe is sufficient to cook the potatoes thoroughly, resulting in a crispy exterior and tender interior.
Allow the roasted potatoes to cool to room temperature. Store them in an airtight container. Refrigerate for up to 3-4 days. To reheat in the oven, preheat your oven to 350°F. Place the potatoes on a baking sheet in a single layer. Heat for about 10-15 minutes. To reheat in the microwave, place a damp paper towel over the potatoes to retain moisture. Heat in short intervals, checking and stirring in between until they reach the desired temperature.
Serving Suggestions
These crispy oven roasted potatoes are the perfect side dish for almost any meal. I love serving them alongside Acqua Pazza, Oven Baked Pot Roast, and Chicken With Creamy Mushroom Sauce for a hearty family dinner. They also pair beautifully with vegetables like Roasted Green Beans or a fresh Italian salad with Balsamic Dressing or Parmesan Vinaigrette.

My Pro Tips
Recipe Tips
- Choose the Right Potatoes: Select potato varieties like Russet, Yukon Gold, or red potatoes for optimal texture and flavor.
- Uniform Size: Cut the potatoes into uniform-sized pieces to ensure even cooking. This helps in achieving a consistent texture.
- Single Layer: Spread the potatoes in a single layer on the baking sheet. Crowding can lead to uneven cooking and less crispiness.
- Stir Halfway Through: Stir the potatoes halfway through the cooking time to ensure they cook evenly on all sides.

Love oven roasted potatoes. My preferred method is really simple; butter, uniformed sized potatoes, salt and pepper. Iโll mix them up depending upon what Iโm serving them with. All in all they are right there with my harvest time pan roasted potatoes where Iโll parboil baby B potatoes in their jackets until almost tender, then cut in half and fry in butter until finished.
Yumm, sounds tasty!
