Slice the carrots in half vertically so they are all approximately equal in width. Place them in a large mixing bowl.

- Melt the butter. Then, in a small bowl, whisk together the glaze ingredients until well combined. Add the honey glaze to the mixing bowl with the carrots. Mix the carrots with the glaze well, coating them completely. Spread the carrots evenly across the prepared baking sheet.

- Bake the carrots for approximately 20-25 minutes or until fully cooked and fork tender, making sure to stir twice during the cooking time so they roast evenly.

- Remove from the oven, transfer the cooked carrots to a serving platter, drizzle with more honey, and sprinkle with fresh thyme or parsley or season with salt and pepper if desired.
