In a large mixing bowl, combine the cooked chicken, cream cheese, sour cream, salt, pepper, diced green chiles, garlic powder (if using), and 1¼ cups of shredded cheese. Mix until well combined. Season with salt and pepper and adobo seasoning if desired.
