Add the prepared potatoes and garlic to the baking sheet, add olive oil and toss to coat all sides. Arrange the sausage links on top of the potatoes in a single layer. Add the tomatoes to the pan and gently toss to combine. Sprinkle with herbs, salt, and pepper.
Bake for 30-35, or until potatoes pierce through with a fork. You can open the oven and stir from time to time to ensure the dish cooks evenly. Serve hot. Mangia! (Eat)
Notes
Cooking Time: The size of your sausages will affect cooking time. Smaller links (about 5 per package) are usually done in 18–20 minutes, while larger ones (3–4 per package) may need closer to 25 minutes.
Give Everything Space: Don’t overcrowd the pan—spread the sausage and veggies out so they roast evenly and develop that nice golden color.
Line the Pan: For easy cleanup and the best texture, line your sheet pan with aluminum foil. It prevents sticking and helps everything crisp up. I don’t recommend parchment paper, as it can cause the sausage and vegetables to steam instead of roast.
