PiesCream Sandwich with flaky tender, slightly salty, not to sweet, cinnamon coated pie crust meets the sweet, creamy, smooth ice cream and it is a true match made in heaven. If you like pie crust and ice cream I encourage you to get on this sweet treat train.

1pintAlden’s chocolate chunk ice creamor flavor of your choice
Cinnamon sugar5 tablespoons sugar and 1 tablespoon of cinnamon
Plastic Wrap for sealing the ice cream sandwiches
Instructions
Baking Pies:
Preheat oven to 375 degress F
Line a 9X13 in cookie sheet with parchment paper, set aside
Make cinnamon sugar by mixing the two ingredients in a small bowl until well combined, set aside
Make pie dough according to recipe directions
After rolling out the pie dough make 12 even rounds using a 3 inch cookie cutter
Place the cookie shapes on the parchment lined cookie sheet
Sprinkle each cookie with cinnamon sugar mixture (you may have extra)
Bake pies for 15 minutes until golden brown
Place pies rounds on a cooling rack until they are completely cooled (about 15-20 minutes)
Get ice cream out of the freezer and let it sit out for about 10 minutes until slightly soft
Assembling the Ice Cream Sandwiches:
Take one pie round and gently press ice cream about 1 inch high then cover with the other pie round. DO NOT PRESS HARD as the pie shells are flaky and tender
Gently wrap each individual PiesCream Sandwich in plastic wrap and freeze at least 2 hours before serving
As soon as you finish assembling each one place in the freezer so they aren’t melting as you prepare the others
Notes
You can use leftover pie crust from baking a pie too.
