  1. First, bring a large pot of generously salted water to a boil. Cook pasta until 1–2 minutes shy of al dente. Reserve at least 2 cups of pasta water before draining. Do not rinse. Before seasoning, pat the fresh scallops very dry with paper towels. Then, season both sides with ½ teaspoon sea salt and freshly ground black pepper. One seasoned, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat until shimmering.
