This Mediterranean cucumber salad is the kind of recipe you make once and immediately memorize- so good and easy! Follow the step-by step photos and see the recipe card at the bottom for a printable version.

- Dice the cucumbers into bite-sized pieces. Halve the cherry tomatoes and finely dice the red onion. In a large bowl, combine the cucumbers, tomatoes, red onion, sliced Kalamata olives, parsley, and mint. Sprinkle the crumbled feta cheese over the top

- In a small bowl or mason jar, whisk together the olive oil, red wine vinegar (or lemon juice), minced garlic, Dijon mustard, Italian seasoning, salt, and pepper until well emulsified. Pour the dressing over the cucumber mixture and gently toss until everything is evenly coated.

- Lightly toss the salad.

- Allow the salad to sit for 10–15 minutes before serving so the vegetables absorb the dressing. Finish with fresh mint and an extra drizzle of olive oil if desired. Serve chilled from the fridge or at room temperature.

- 1 cup Kalamata olives, drained and sliced

- 2 tablespoons fresh mint, finely chopped
- 3 tablespoons fresh parsley, finely chopped
Zesty Italian Dressing
- ¾ cup extra-virgin olive oil
- 4 tablespoons red wine vinegar or fresh lemon juice
- 1 clove garlic, minced
- 2 teaspoons Dijon mustard
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste

- Extra fresh mint leaves
