- Make the Lemon Curd: In a medium saucepan, whisk together eggs, salt, sugar, lemon zest, and lemon juice until smooth.

- Place over medium-low heat and cook, whisking constantly, until the mixture thickens and coats the back of a spoon, about 8–10 minutes. Do not let it boil.

- Remove from heat and stir in the butter until melted and glossy. Strain through a fine mesh sieve if you want it extra smooth. Let cool slightly, then cover and refrigerate for 1–2 hours until fully chilled and thickened.
