Tomato Tortellini Soup FAQs

how do i keep the tortellini from get mushy in the soup?

Add tortellini toward the end of cooking and simmer just until al denteโ€”usually 3โ€“5 minutes, or when they float and feel slightly springy. If making the soup ahead, cook the tortellini separately and add it right before serving to preserve its texture.

Can I use frozen tortellini?

Yes! Frozen tortellini works perfectly in this soup. Add it directly to the simmering soup without thawing and cook a minute or two longer than the package suggests, just until al dente.

Make-Ahead Storage and Reheating information

Make Ahead: Prepare the soup base (through Step 4) up to 2 days in advance. Cool completely, store in an airtight container in the fridge, and cook the tortellini just before serving for the best texture.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Note: The pasta will continue to absorb liquid and soften over time.
Reheating: Reheat gently on the stovetop over medium-low heat until hot, adding a splash of broth or cream to loosen the soup if it has thickened. You can also reheat in the microwave. For best results, store extra tortellini separately and add to the soup when reheating.

Serving Suggestions

Serve this tomato tortellini soup with a few fresh sides or a protein to round out the meal. My Lemon Arugula Salad adds a bright, peppery contrast to the creamy tomato broth, while my Pear Gorgonzola Salad brings a sweet and savory touch. For a heartier dinner, pair the soup with the grilled cheese from my Creamy Tomato Soup and Grilled Cheese recipe, easy Baked Chicken Thighs, or serve it alongside warm Focaccia Bread for dipping.

My Pro Tips

Recipe Tips

  • Choose Quality Tomatoes: San Marzano tomatoes bring a rich tomato flavor and natural sweetness to the soup.
  • Take Your Time With the Aromatics: Let the onion soften and turn translucent before adding the garlic. This builds flavor without letting the garlic burn.
  • Season as You Go: Taste the soup as you cook and adjust the salt, pepper, and sugar as needed. Check the seasoning again before serving.
  • Keep an Eye on the Tortellini: Cook the tortellini according to the package directions and check for tenderness so it doesnโ€™t become mushy.
  • Choose Your Texture: Blend the soup with an immersion blender for a smoother tomato base, or leave it chunky if you prefer more texture.

So excited to make this recipe tonight! Iโ€™m out or basil so Iโ€™m thinking of adding a couple tablespoons of pesto instead of basil. Do you think that would work well? Thank you!

I made this today. It was amazing!
My husband has not his partial in a while and I was looking for something he wouldnโ€™t need the extra teeth for.
He also loved it. It certainly gave us the variety we needed.
I forgot the trash basil but I had dried. It worked wonderfully. Next time, I think I will add some Hatch green chile for an extra kick. Awesome job Missy Elana

Another delicious recipe Elena! My mother-in-law is staying with us again and I opened your email this morning and saw this recipe and I immediately knew I had to make it and of course we all loved it. As I type this I am finishing off a pumpkin square from your recipe that I made over the weekend. ๐Ÿงก๐ŸŽƒ

    1. Yay! Double win! They are both super tasty recipes. If you like the pumpkin bars- have you tried the banana bars with cream cheese frosting? Perfect for those overripe bananas on your counter :). Enjoy!
