Why I Love These Green Beans

I love this recipe because it turns fresh green beans into a side dish with very little fuss. The combination of garlic, shallot, fresh lemon juice, and lemon zest gives the beans plenty of flavor while roasting brings out their natural sweetness.

It is one of those vegetable dishes I can serve alongside almost any meal, from Roast Turkey Breast and Panko Fried Shrimp to pasta and grilled meats, like these Juicy Pork Chops.

Garlicky Green Beans FAQs

How Long do you Cook Green Beans in the Oven?

At 425°F, fresh green beans generally take about 15 minutes to roast, depending on their size and desired texture. Thin green beans may cook a little faster, while thicker beans may need a few extra minutes. For the best browning, arrange them in a single layer without overcrowding the pan.

Do you need to blanch green beans before roasting them?

No, you do not need to blanch the green beans before roasting them. Roasting them cooks them enough. They will be tender and slightly crispy.

Storage, freezing, and reheating information

Transfer the leftover roasted green beans with garlic and lemon to an airtight container or a jar with a lid and keep them in the fridge for up to 3 days. You can freeze them by placing the leftover roasted green beans in a freezer container for up to 3 months. The best way to reheat your leftover roasted green beans is in the oven.

Serving Suggestions

These roasted green beans with lemon make a fresh vegetable side for roasted meats, fish, pasta, or a holiday dinner. I especially love serving them with a Standing Rib Roast, Oven Baked Italian Sausage, Chicken Thighs with Creamy Mustard Sauce. For a larger meal, add an additional side like these Easy Cheesy Potatoes or Creamy Brussels Sprouts.

My Pro Tips

Recipe Tips

  • Dry the green beans thoroughly. Excess moisture can prevent them from browning.
  • Don’t overcrowd the baking sheet. Give the beans space so they roast instead of steam.
  • Check thin beans early. Haricots verts and other slender beans may cook faster than standard green beans.
