A Little Jar of Pistachio Goodness

Pistachios have such a distinct flavor that they really donโt need much to make something special. Thatโs one of the reasons I love making this pistachio butter at home. The pistachios do all the work as they slowly release their natural oils and turn into a creamy spread.
I especially love having it on hand for pistachio desserts, including my Pistachio Tiramisu, but it is just as good spread on Italian Brioche Bread or spooned over yogurt. It is one of those little homemade staples that can make an everyday bite feel a little more special.

Simple Ingredients
Quality is essential in this recipe since there are only a couple of main ingredients.

- Raw Pistachiosโ These are the heart of the recipe. You want them raw so you can control the toasting process and bring out their naturally sweet, nutty flavor. Shelled pistachios save time and mess, and choosing unsalted allows you to season to your preference. Look for fresh, vibrant green pistachios for the best color and taste.
- Fine Sea Salt- Just a pinch of salt goes a long way to balance and enhance the rich, earthy sweetness of the pistachios.
- Sugar (Optional)โ A touch of sugar brings out the natural sweetness of the pistachios.
See recipe card for full information on ingredients and quantities.
Variations & Substitutions
- Salt-Free: Leave out the salt for a pure pistachio flavor.
- Sweeter: Add the optional sugar for a sweeter pistachio butter. Swap the sugar with honey or maple syrup for a natural sweetener (add after blending). Make my Homemade Nutella (Chocolate Hazelnutย Spread) next!
- Thinner Texture: If the finished butter is too thick, add a drizzle of neutral oil (like avocado or light olive oil).
- Flavor: Mix in a splash of vanilla extract or a pinch of cinnamon for a warm twist. Add a swirl of this delicious variation to your Fluffy Pancakes!
How To Make Pistachio Butter
The key to this making pistachio butter is patience. The pistachios will not turn into butter immediately; they need time to release their natural oils and move through several stages before becoming smooth. Follow the step-by-step photos and see the recipe card at the bottom for a printable version.

- Preheat your oven to 350ยฐF. Spread the pistachios evenly on a baking sheet in a single layer. Toast for 5-7 minutes, stirring halfway through, until theyโre lightly golden and fragrant. Do not overroast or they will lose their bright green color. Toasting deepens the flavor and helps release the natural oils. Let them cool for 5โ10 minutes before blending.

- Add the warm (but not hot) pistachios to a high-powered food processor or blender. Blend for 1 minute to break down the nuts into crumbs. Scrape down the sides. Continue blending in 30-second intervals, pausing to scrape down as needed. After about 5โ8 minutes total, the pistachios will go from crumbly to a thick paste, then to a smooth, creamy butter as the oils are released.ย

- Once the butter is smooth, add the sugar (if using) and a pinch of sea salt. Blend for another 30 seconds to fully incorporate.

- Transfer the pistachio butter to a clean glass jar with a tight-fitting lid. Let it cool completely before sealing.
Creamy Pistachio Butter FAQs
Yes, but the flavor will be different. Roasted pistachios add depth, but if theyโre salted, skip or reduce the added salt in the recipe. I always recommend raw, unsalted pistachios so you can control the flavor.
Be patient! It can take 5โ10 minutes in a food processor. Stop and scrape the sides often. If itโs still too thick, your pistachios may be too dryโadd a tiny bit of oil (like avocado or light olive oil) to help.
This can happen if the nuts are over-toasted or over-processed. Always toast lightly and blend until smooth to keep that beautiful, natural green color.
Pistachio butter and Italian Pistachio Cream are two different preparations. Pistachio butter is made primarily from ground pistachios, while pistachio cream, or crema al pistacchio, is a sweet dessert spread that typically includes additional ingredients such as sugar and dairy or white chocolate. So if youโre searching for Italian pistachio butter because you want the sweet spread commonly used in Italian desserts, youโre likely looking for pistachio cream. If you want a pure pistachio spread made from the nuts themselves, this pistachio butter is the right recipe.
Refrigerator: Store in an airtight container or glass jar in the fridge for up to 1 month. The cooler temperature helps preserve the natural oils and keeps the flavor vibrant. It may firm up slightlyโjust let it sit at room temperature for a few minutes before using.
Room Temperature: If your kitchen is cool and dry, you can store it at room temperature in a sealed jar for up to one week. This is great for easy spreading!
Note: Separation is natural: If the oils separate, give it a good stir. Thatโs how you know itโs made with real, simple ingredients.
Serving Suggestions
There are so many ways to use homemade pistachio butter. Spread it over Crusty Bread, spoon it onto waffles or German Pancakes, or swirl it into yogurt or oatmeal.. For an Italian-inspired use, add it to Pistachio Tiramisu or use it alongside other pistachio desserts. It also works in savory applications; mix bit into Orange Vinaigrette or use as a base for a Pesto sauce over Pistachio Pesto Pasta or roasted veggies.

My Pro Tips
Recipe Tips
- Choose fresh, vibrant pistachios. Since pistachios are the main ingredient, their quality has a direct effect on the flavor of the finished butter.
- Donโt stop at the paste stage. The pistachios need additional blending for their natural oils to turn the thick paste into creamy butter.
- Scrape the sides often. This helps the pistachios blend evenly.
- Watch the heat. If your appliance becomes hot or needs a break, pause the blending before continuing.
- Let it cool before sealing. Transfer the finished butter to the jar and allow it to cool completely before putting on the lid.
