Description

Ingredients
- 2 cups heavy cream
- 1 cup freshly grated parmigiano reggiano
- dash of nutmeg (optional)
- 1 teaspoon Saffron
- 3/4 lbs of your favorite pasta variety
- Salt to taste
- Extra thick shavings of fresh parmigiano for serving
Instructions
- Bring a large pot of water to boil. Add plenty of salt to season and start to cook your favorite pasta variety
- In a medium sauce pan over low heat pour in: cream, cheese, saffron, and nutmeg (if using). Add salt to taste. Stir constantly and simmer about 5-6 minutes until a creamy slightly bubbly mixture forms. Drain pasta and place in a large serving bowl. Pour cream sauce on top and mix until combined. Enjoy and serve HOT!!

Did you use fresh;y grated cheese? I find that makes a big difference. Maybe the cream boiled too long or too hard? I’m so sorry it didn’t turn out for you. I’m happy to help troubleshoot. It is a wonderful recipe.
