Ingredients

One Recipe for: Carrot, Chèvre, Basil, and Olive Salad with Lemon Olive Oil Dressing

  • Salmon fillet
  • Red potatoes
  • Herb Dressing (Shake all ingredients in a glass jar with lid):
    • Olive oil
    • Italian dry seasoning (mix of dried marjoram, rosemary, basil, thyme, oregano, and sage)
    • Salt
    • Pepper

 The Mediterranean diet stresses reducing or eliminating processed foods, and focus on meals full of fruits, vegetables, beans, lentils, whole grains, nuts and seeds.

Eating healthy is not a diet, it’s a lifestyle. Like my nonno always said, “Eat Everything! IN MODERATION. A little bit of a good thing can go a long way.”

The BEST Salads are Simple!

I love my salads simple. A few fresh ingredients can bring a salad to life without overdoing a simple side dish.

This salad is bright, healthy, satisfying, and also beautiful.

 You get a perfect creamy texture with the soft and mild chèvre cheese, a tangy sweet from the olives and carrots, and a light dressing to wrap it all together.

Perfectly Baked Salmon

Perfectly baked salmon in the oven. This baked salmon recipe is easy to customize with your favorite seasonings, and takes less than 15 minutes from start to finish.

HOW TO BAKE SALMON IN THE OVEN:

(tips adapted from Gimmie Some Oven)

Bring the salmon to room temperature.

Let your salmon filets rest out on the counter for 15-30 minutes, until they have (at least mostly) come to room temperature. This will help with even cooking.


Season the salmon.

Blot the salmon dry on all sides with paper towels. Then place the salmon skin-side-up* (if you get it with skin) on an oiled baking sheet (or in an oven-proof, non-stick skillet, such as a cast iron pan).

If the ends of the salmon filets are really thin, just fold them under a bit for even cooking. Brush on all sides (except the bottom) with good quality olive oil. Sprinkle with flake sea salt and a little pepper (you can add other seasons if you wish).


Bake.

Bake at 450°F until the internal temperature of the salmon reaches 140°F* (or I like to cook mine until it reaches 135°F*), about 4-6 minutes per half inch of thickness. You can also test for doneness by inserting a fork or knife in the salmon and twisting it a bit; the fish should be opaque and flake easily.

Transfer salmon to a clean plate.

Remove pan from the oven and transfer the salmon to a clean serving plate.

Then sprinkle each filet with a good squeeze of lemon juice, sprinkle with fresh herbs if you’d like, then…
Serve warm! And enjoy!

  • 16 oz fillet of salmon cooked according to your liking (see instructions for the perfect BAKED salmon in this post)
  • 1.5 lbs small red potatoes
  • Herb Dressing (Shake all ingredients in a glass jar with lid):
    • 1 cup good quality olive oil
    • 2 tablespoons good quality Italian dry seasoning (mix of dried marjoram, rosemary, basil, thyme, oregano, and sage)
    • 1 teaspoon salt
    • 1 teaspoon pepper

 

Instructions

  1. Bake or cook salmon to your liking
  2. Prepare salad and set aside (wait until serving to add dressing)
  3. Bring a large pot of salted water to a boil and cook potatoes for about 15 minutes until fork tender. Drain and Let potatoes cool about 10 minutes and cut into thin slices. Toss salad with dressing. Assemble salad and potatoes in rows and place salmon over the top. Generously pour the herb olive oil dressing over the salmon and potatoes.
