This no-frills Italian dinner is typical to the Northern Region of Italian in the cold months, or any time of year, really. It is a simple and easy weeknight meal that is loved by all! Make it for your next family gathering and it will soon become a family favorite.

The succulent roasted Italian sausage and potatoes coated in sweet tomatoes and herbs make me think of the days my nonna used to make this meal for us.

I can smell it now! The potatoes delicately balance out the flavors with their neutral yet hearty taste creating a perfectly balanced meal. This will quickly become one of your family favorites!

This sheet pan Italian sausage and potatoes recipe couldn’t be easier. You only need a few ingredients and it only takes a few minutes of hands-on time to put it all together.

This sausage and potato bake calls for a handful of main ingredients and fresh herbs.

  • Sausage
  • Olive oil

How to make Roasted Sausage and Potatoes

Making sausage and potatoes in the oven is super simple.

Line a baking sheet with foil, then add the sausage, potatoes, and onions, evenly drizzle with olive oil, evenly season with the herbs, salt, and pepper, and toss to combine and coat evenly.

Then, bake until golden perfection. It is an easy meal to whip together when you need to put a meal on the table without taking too much time.

Italian” Sausage Variety

For this recipe, I prefer Italian sausage links, but you can use any variety you like. Italian sausage, as it’s referred to in the United States, is most often a pork sausage that is made with fennel seeds or anise.

It packs a ton of flavor and is perfect for this meal. You can find a variety of hearty Italian sausage at most grocery store meat counters, or at your local butcher.

If you can’t find this variety use your favorite kind of sausage. You can try it with traditional smoked sausage as well.

Baked Italian Sausage and Potatoes

There are different ways to cook or bake sausage, but baking sausages is one of the easiest ways! It’s largely hands-off, you only need to flip them once. And you don’t have to sit in front of the hot grill and worry about them burning.

When you add vegetables and potatoes to this one pan meal you can make this a fantastic sheet pan dinner, that involves little clean up!

Potato variety

Yukon Gold Potato Variety

It all starts with the potatoes themselves. In order to achieve the creamy smooth texture, you MUST use the YUKON GOLD variety.

This is the closest variety to the Italian yellow potato variety that I find in Sardegna, Italy.

The flesh is yellow to gold, firm, naturally flavorful, and moist which makes them perfect for roasting in the oven. For other varieties, you could use red potatoes, baby gold potatoes, yellow potatoes, or any baby potato variety.

Canned tomato varieties that boast of being diced or crushed tend to have more additives to keep them fresh, and they also tend to be harder to break down when making sauces, soups, or roasting.

For this recipe, you will need canned whole peeled tomatoes. I recommend these brands:

Top Tips

Cooking Time – The cooking time may vary based on the size of your sausages. If they are smaller links (5 in a package), check them after 18 to 20 minutes. If they are larger (3 to 4 in a package), they will likely take closer to 25 minutes.

  • Make sure not to overcrowd the pan or the meats and veggies won’t roast as well in the oven.

Foil- I recommend aluminum foil to line your sheet pan, it keeps the sausage from sticking to the bottom of the pan and makes cleanup much easier. I do not like using parchment paper since it tends to steam the meat and veggies rather than crisp them.

Equipment

I like to use a meat thermometer or instant-read thermometer to check the internal temperature of the sausage (it’s done at 160 degrees F).

You can use a baking tray for this recipe, but I do recommend a rimmed sheet pan. In case the sausages release any juices, they won’t slosh out and burn in the oven.

Storage

Storing Tips – Cooked sausages will keep for 3-4 days in the refrigerator when stored in an airtight container.

Leftovers

This is a great meal to serve the next day. If you have any leftovers toss them with fresh al dente pasta if desired, or place them on focaccia bread with some mozzarella cheese! Either way, some extra tomato sauce (marinara sauce) is a fantastic addition.

Ingredients

Units Scale
  • 1 lb Italian sausage (or sausage of choice)
  • 1 lb Yukon gold potatoes, peeled and quartered
  • 1/4 cup extra virgin olive oil
  • 1 14.5 oz can whole peeled tomatoes, cut into pieces and liquid drained
  • 2 cloves of garlic, peeled and cut in quarters
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • Salt and Black Pepper to taste

Instructions

  1.  Line a 9×13 inch baking pan with foil. Preheat oven to 425 degrees F.
  2.  Add the prepared potatoes and garlic to the baking sheet, add olive oil and toss to coat all sides. Arrange the sausage links on top of the potatoes in a single layer. Add the tomatoes to the pan and gently toss to combine. Sprinkle with herbs, salt, and pepper.
  3. Bake for 30-35, or until potatoes pierce through with a fork. You can open the oven and stir from time to time to ensure the dish cooks evenly. Serve hot. Mangia! (Eat)

  2. I just made this and it is so good!
    My husband is a hunter so I had Italian style venison sausage with fennel. I don’t have good canned tomatoes, so I used halved grape tomatoes. Other than that, I pretty much followed the recipe. I will definitely make this again.

  7. This was a quick and easy dinner! I may have not cut the potatoes small enough and they didn’t get done without additional time. Next time I will cut potatoes smaller or give them a head start before I add the other ingredients. Love the peppers and onions as suggested but the tomatoes were the best. The flavor concentrated and intensified make them absolutely the perfect bite with a sausage or potato. I used fresh herbs as I had a bunch left over from Thanksgiving (no chopping just put the whole stems on and removed before serving). Adding to our meal rotation.
