  • 1 pound Italian sausage, or sausage of choice
  • 1 pound Yukon gold potatoes, peeled and quartered
  • ¼ cup extra virgin olive oil
  • 1 14.5-ounce can whole peeled tomatoes, cut into pieces and liquid drained
  • 2 cloves garlic, peeled and cut in quarters
  • ¼ teaspoon dried thyme

    I made this tonight! I used Walmart Marketplace brand Mild Italian Sausage, Centro brand whole canned Italian tomatoes that I drained slightly then broke up into smaller pieces and small yukon gold potatoes that I cut into 4ths. I also added fresh whole green beans, but otherwise made the recipe as directed. It was amazing! It was easy to assemble and could even be prepped ahead of time and popped into the oven when you’re ready. I will be making this again!
