How To Make Carbonara
This carbonara gets its creamy texture from eggs, cheese, rendered pork fat, and starchy pasta water, and not cream. Follow the step-by-step photos and see the recipe card at the bottom for a printable version.

- Beat the room-temperature eggs until well-mixed.

- Combine the eggs with freshly grated cheese and black pepper.
Tip for the creamiest carbonara
Grating the Cheese. It helps to finely grate the cheese so it can melt quickly and create the sauce.

- The mixture will be very thick.

- Cook the pork a skillet over medium heat until crisp and the fat has rendered.
Start boiling your pasta water at the same time you begin frying the meat. Be sure to salt the water generously—it should taste as salty as the sea for perfectly seasoned pasta. Cook the pasta until al dente and reserve up to ½ cup of the starchy pasta water before draining.

- After the meat is nice and crisp, move it onto a clean plate. Reserve a couple tablespoons of pan drippings and discard the rest of the grease. Add the drained pasta to the warm pan with the guanciale fat. Toss to coat the pasta evenly.

- Remove the pan from the heat. This is one of the most important steps. Take the skillet completely off the heat before adding the egg and cheese mixture to prevent the eggs from scrambling. Slowly add the egg and cheese mixture while tossing vigorously. Add reserved pasta water a little at a time until the sauce becomes glossy and coats the pasta.

- Fold the cooked pork into the pasta, reserving some pieces for topping if desired.

- Top with freshly grated cheese and plenty of freshly cracked black pepper.
